VINIFICATION NOTES:

Selected grapes from the highest vineyards of the Syrah variety. Destemming and crushing process at low revs in order to preserve the integrity of the grapes. Cryo-prefermentation

maceration at low temperatures.

The fermentation starts at 18ºC and it may not exceed the 28ºC. Once the optimum extraction has been achieved, it is devatted and followed by malolactic fermentation with the

fine lees. The ageing process lasts 6 months in French and American oak barrels.

WINE TASTING NOTES:

The nose presents aromas of red fruit mingled with hints of vanilla, minerals and spices with good intensity and evolution in which black fruit, coconut and liquorice aromas can be found.

The palate is full-bodied and balanced. With an elegant aftertaste and a fragrant retro-nasal.

WINE PAIRING:

A wine to drink with roasts, game and pâté.

The recommended serving temperature is around 18ºC.
