WINE MAKING Manual selected harvest. Pre-fermentative maceration and controlled alcoholic fermentation with controlled temperature and daily pumping-overs and subsequent spontaneous malolactic fermentation in stainless still deposits. Finally comes the filtering and the bottling.
TASTING NOTES
Colour: Red cherry with pinkish rims, deep, clean and bright.
Aromas & Flavours: Intense, with ripe red and black fruits and liquor aromas, expressive and subtle balsamic background.
Palate: Pleasant, Fruity and crispy. Powerful, Full-bodied with a fresh acidity and a friendly tannin. Long aftertaste, persistent, ripe and tasty.
Best pairing with?Roasted beef, stews / Galician cocido (pork stew), White meats,
greasy fish dishes. Grilled and roast beef, cured Iberian meats and cheese.
Tips: Aerate for 5 minutes before serving.
