ELABORATION:

Selected Syrah variety grapes from vineyards cultivated at a high altitude. The pressing and stripping is made at low revolutions in order to maintain the integrity of the grape. Prefermentative crio-soaking at a very low temperature. Fermentation starts at 18ºC and temperature is controlled without exceeding 30ºC. When the extraction is completed the run off takes place and starts the malolactic fermentation under thin strings. The aging process takes place in French and American oak barrels and lasts between 4 and 6 months, depending on the year.

TASTING NOTES:

Ruby red color with purple iridescence, dense appearance with thick tear.

Intense bouquet, clean, direct. With continuously evolving and changing ranges of multiple aromatic representations. A balsamic touch without overwhelming the nose, we can find three different aromatic origins, coffee, cedar, cocoa, raspberry, blackberry, ink, white pepper, pink pepper, rosemary, etc. Complex, clean and intense. A luxury for the nose.

Fatty and wide in the mouth with a velvety texture, a well integrated very ripe tannin, adorned with the profile of the nasal aromas. Long and lively.

PAIRING:

Perfect combination with roasts, meats and cold cuts, very suggestive with pates. The optimum temperature for consumption is around 17ºC
