Tasting notes of winery's winemaker

ELABORATION:

The Wine is elaborated with Doradilla grape variety (native variety). Fermentation takes place in French oak barrels over 8 months, with batonnage ensuring perfect integration.

TASTING NOTES:

Clean, bright, and creamy in the glass; constant pale straw colour, with no significant changes.

Honest, yet complex nose. The main aromas are of fruit (mainly stone fruit but with a strong presence of tropical fruit), with welcome floral nuances. Movement gives rise to a wide range of tertiary aromas, the dominant ones being patisserie cream and coconut .

On the palate, there are a never-ending number of sensations: oily, velvety, voluminous,? there is also distinct acidity and intense minerals that produce a long and smooth aftertaste.

PAIRING:

The almost salty mineral presence in this wine makes it a fabulous accompaniment for shellfish and oily fish, such as almadraba tuna and also salmon (either fresh or smoked).

The optimum temperature for consumption is between 4 and 7ºC.
