ELABORATION:

Wine from Pedro Ximen grape variety elaborated from flower must with natural decantation at a low temperature and fermentated under temperature control in stainless steel tanks. The aging process takes place in our cellar in 550 liter American oak barrels for 3 years.

TASTING NOTES:

Dark colored sweet wine with iodized notes and a fat appearance.

With a bouquet of coffee, cocoa, crystallized fruit and citric fruit. With an important presence of the grape variety and a deep reminiscence of raisins. There is a change and evolution in the glass as it oxygenizes mixing compote and spices. Complex and intense.

Direct in the mouth with a balsamic touch that extends through the palate before reaching the retronasal, the same components perceived in the bouquet appear directly. Velvety and not sweetly sick at all. The after taste is long and very pleasant.

PAIRING:

Very appropriate as a dessert wine, it combines well with cheese, citric fruit, and compoted fruit such as quince jelly.

The optimum temperature for consumption is between 4 and 7ºC.
