ELABORATION:
The wine is elaborated with Pedro Ximen grape varieties, starting from a base of Natural Sweet from selected berries, in which the extraction conditions have been carefully preserved, the cleaning and fermentation always in stainless steel. Once the wine has been obtained, it goes through an analytic and organoleptic control in which the wines with the desired parameters are chosen. They go from there to an oxidizing aging in American oak barrels that lasts for at least 5 years.
TASTING NOTES:
Very dark color with a wide layer with iodized tones; oily movement in the glass, with a thick tear, dense and colored. Very intense and clean bouquet, the longevity of this wine gives it a lot of character in its aromatic range, which offers complexity, sugary with coffee and cocoa; mineral in continuous evolution, fresh figs, crystallized fruit and citric notes appear.
Fatty and wide in the mouth, succulent with a soft texture. Its sweetness is well compensated with its acidity. It has an intense retronasal and similar to the nose; the after taste is long.
PAIRING:
The wine combines well with acidic fruit, nuts, cheese and patés.
The optimum temperature for consumption is between 4 and 7ºC.
